Frittata’s – Cooking With Stacey Chan

 

Smoked trout, feta and sweet potato frittata

  • 1 pkt trout (large pky from woolies) (cut up)
  • 1 container of feta (cut into blocks)
  • 3 large sweet potatoes roasted with garlic , olive oil salt and pepper (cut up into quarters)
  • 2 hand fulls of grated mozzarella
  • 2 spring onions chopped
  • 10 eggs
  • 250ml cream
  • Seasoning

 

Method:

 

  • Oil your pan or container.
  • Add all the ingredients into the pan/container aside from the eggs and cream.
  • Mix the eggs and cream and seasoning together then pour over the ingredients.
  • Bake in an oven at 180”c for about 20min – will depend on the oven, but until the eggs is just cooked and not to wobbly.

 

Sweet potato, corn, feta and mint frittata

  • 3 sweet potato, cut and roasted with olive oil, garlic and seasoning
  • 1 tin sweet corn kernels (drained)
  • 1small tub feta (cut into cubes)
  • 8 large mint leave, chopped
  • 2 handfuls mozzarella cheese
  • 10 eggs
  • 250ml cream
  • Seasoning

Method:

 

  • Oil your pan or container.
  • Add all the ingredients into the pan/container aside from the eggs and cream.
  • Mix the eggs and cream and seasoning together then pour over the ingredients.
