A to H of cooking tips

The holiday season is a busy time for whoever is doing the catering in the home.

This traditionally was Mums job, but the present trend is for the whole family to get stuck in to help make the family meals special.

Here are some great tips to help,make life easier in the kitchen!

Almonds and pistachio nuts

To peel either of these nuts, cover with boiling water. Leave for seven minutes then strain. Place in a bowl full of cold water. When cool, drain well and remove skin by pressing between thumb and forefinger. Dry well and use as required.

Basil

Tear, rather than chop basil leaves. Add T the last minute to cooked dishes, or sprinkle over salads and tomatoes. Basil is a great compliment to garlic.

To flavor cabbage, add a teaspoon of plain yoghurt and a sprinkling of pepper.
To prevent cabbage smells, put a couple of lemons in with the cabbage when cooking.

Use the seeds whole or ground in soups, fish dishes,pickles, cabbage, apple pies, dill butter, cakes and bread.

If an egg cracks in boiling water, add a teaspoon of salt to stop it from boiling out into the water.

A few grains of salt in hot fat stops it from spluttering

Cook with the lid off to preserve their color

Herbs

Make a herb oil with freshly picked mixed herbs. Wash and place in a jar.Cover with olive oil and store for two weeks. Use the infused oil for salads, marinades and flavoring generally.
