Cauliflower Breakfast pizza

INGREDIENTS

  • Crust
  • 1 cauliflower
  • 1 tsp. dried oregano
  • 1 tsp. garlic powder
  • 1 egg
  • 1 Tbsp. olive oil
  • 2 Tbsp. coconut flour
  • 2 Tbsp. nutritional yeast
  • salt and pepper to taste

Toppings

  • TIU pizza sauce (or store bought)
  • spinach
  • eggs
  • coconut spray

DIRECTIONS

STEP 1: Preheat the oven to 425.
STEP 2: Chop cauliflower and blend in food processor until a grainy texture forms.
STEP 3: Wrap the blended cauliflower inside a towel (or a few paper towels) and squeeze out the liquid over the sink.
STEP 4: Put the cauliflower in a bowl with the remaining crust ingredients and stir until combined.
STEP 5: Spray a cookie sheet with coconut spray. Separate 1/3 cup of the cauliflower mixture and form into a bowl shape to hold the toppings (this is your crust!). Make additional crusts with the remaining cauliflower mixture or store it in the fridge for later use.
STEP 6: Cook the crust for 12 minutes and take out of the oven. Reduce the temperature to 375.
STEP 7: Add 2 Tbsp. of the TIU pizza sauce or store-bought pizza sauce to each cauliflower crust. Crack 1 egg in each crust (make sure to keep it in the “bowl”!). Top with a sprinkle of chopped spinach.
STEP 8: Bake for 14 minutes or until egg is cooked to your liking!
