A perennially popular, savoury muffin. Quick and easy to make.
Makes 12 large muffins
500ml cake flour
15ml baking powder
5ml mustard powder
250ml cheddar cheese, grated
100g feta cheese, cut into small blocks
150g spinach, cooked, well drained and chopped (about 1 cup, cooked)
5ml mixed dried herbs
275ml buttermilk or maas
80ml sunflower oil
1 extra large egg
Preheat oven to 200C. Using a large mixing bowl, sift in cake flour, baking powder, salt and mustard powder.
Add cheddar and feta cheeses, chopped spinach and herbs.
In a separate bowl, combine buttermilk, oil and egg and mix well. Pour this into dry ingredients and mix until combined.
Grease a muffin pan or use a non-stick spray. Spoon mixture in, filling almost to the top of each muffin hole.
Bake for about 20 minutes. Remove from oven and place on cooling rack. Delicious eaten warm.
