Ideal for the lazy days of summer; quick and easy to prepare. Serve with ciabatta or any flat bread. Serves 4 – 6
1 large English cucumber, chopped
1 onion, peeled and chopped
30 g butter or margarine (30 ml)
750 ml hot vegetable stock
Salt and freshly-ground black pepper to taste
125 ml cream or crème fraiche
30 ml snipped chives
1. Sauté cucumber and onion in butter in a saucepan on a medium hob or in microwave oven on 100% power for 6 – 8 minutes until vegetables are soft.
2. Add in the stock and cook a further 10 – 15 minutes.
3. Season to taste. Process with a plunge blender until smooth.
4. Add in the cream or crème fraiche and process again until blended. 5. Chill. Sprinkle over chives before serving with ciabatta bread.
Tips: • Add in 20 ml finely-chopped mint for a fresh flavour. • Add 10 ml ground cumin in step 1.
