Bake a batch of these scrumptious biscuits and have available for those unexpected visitors or as a treat for your family. Ideal to pop into school lunchboxes!
Makes about 25 – 30 large biscuits or about 60 small
250g butter, softened
250ml white sugar (1 cup)
250ml brown sugar
2 large eggs
5ml vanilla essence (1 tsp)
750ml cake flour (3 cups)
15ml baking powder (1 Tbs)
5ml bicarbonate of soda (1 tsp)
10ml hot water (2 tsps)
250ml choc chips (1 cup)
125ml pecan nuts, chopped (½ cup)
Preheat oven to 180˚C. Line baking trays with baking paper.
Cream together the butter and both sugars. Add the eggs, one at a time and beat until light and creamy.
Add the vanilla essence.
Sift the flour and baking powder and add to batter. Dissolve the bicarbonate of soda in the hot water and add this to mixture and combine well.
Fold in the chocolate chips and pecan nuts.
Drop spoonfuls of mixture on to baking tray. You can also form small balls with the mixture and then flatten with a fork.
Bake for 10 – 12 minutes.
Remove from oven and allow to stand for a few minutes until hardened and then leave on a cooling rack. Once biscuits are completely cooled place in a sealed container.
