Country Roast with Balsamic Glazed Onions


  • 1 Fry’s Soy and Quinoa Country Roast

For the Balsamic Glazed Onions:

  • 12 brown pickling onions
  • 30ml olive or coconut oil
  • 30ml balsamic vinegar
  • 30ml caster sugar
  • 100ml good-quality vegetable stock
  • 5 sprigs fresh thyme leaves


  • Prepare the Country Roast according to the packaging instructions.

For the Balsamic Glazed Onions:

  1. Cut the pickling onions in half lengthways and remove the skins, trimming the ends but leaving the root intact.
  2. Heat the oil in a frying pan over a medium heat.
  3. Add the onions and cook for 3 – 5 minutes or until golden.
  4. Add the vinegar and the sugar and cook for a further 5 minutes.
  5. Add stock and thyme, cover and cook for a further 5 to 7 minutes or until tender.
  6. When the Country Roast is cooked through, add the Balsamic Glazed Onions on top and serve with a side of your favourite roasted vegetable.
