CRUNCHY COLESLAW & BROCCOLI SALAD

Coleslaw-&-Broccoli-Salad
Crunchy goodness all in one bowl. A great summer salad and so easy to assemble. Enjoy!
(leave out bacon if vegetarian)8- 10 servings 1 head of broccoli
A handful of lettuce leaves
1 packet coleslaw or 1 cup sliced cabbage and 1 cup grated carrots
About a cup of sliced red cabbage
3 -4 spring onions, finely chopped
half a cup snow peas
half a cup raisins
Toasted almonds for garnishDressing:
250ml good quality mayonnaise
250ml plain yoghurt
15ml honey
White pepper to tasteBlanch broccoli in boiling water for 5 – 6 minutes and then strain and place in ice water. Dry well before using and break into florets. You can also microwave if you wish for about 3 minutes on 100%.
Using a large salad bowl, place lettuce leaves on base, then coleslaw and red cabbage followed by rest of ingredients, except almonds.
Mix all the dressing ingredients together. If you prefer a slightly sweeter dressing, just add a little more honey.
Pour dressing over salad and toss gently. Sprinkle toasted almonds over top.
