HOMEMADE GINGER BEER

HOMEMADE GINGER BEER

Ingredients

  • 15 grams fresh ginger (unpeeled, finely chopped)
  • 1 lemon thickly sliced
  • 300 grams castor sugar
  • 2ml cream of tartar
  • 5ml dried fast action yeast
  • Lemon or lime wedges
  • Enough bottles to store 3 litres of liquid

Method:

  1.  Put all ingredients excluding yeast over a large pan on medium heat with 750ml of cold water
  2.  Slowly bring to the boil stirring until all sugar is resolved. Reduce heat and simmer for 5 minutes
  3.  Turn off the heat, add 1.5ml cold water, sprinkle yeast on top, put into a cool place over night
  4.  The next day strain the entire contents of then pan through a sieve, into a big bowl
  5.  Pour through a funnel to divide liquid into bottles. Leave 4 finger gap at the top to allow for build-up of fermentation
  6. Screw the lids tightly and put back into to cool place over night again
  7.  Next morning carefully unscrew the lid to see if there is a build-up of gas, but it should take 3-5 days to get fizzy. Test the contents every 24 hours.
  8.  When you hear a fizz, unscrew the lid and move the bottles to the fridge. Drink within 3-4 days. Pour over ice with a slice of lemon
