Time for a refreshing cooler that’s perfect for relaxing next to the ocean. When the rays of summer are high overhead, try the delicious taste of melon and lime.
- 4 1/2 cups cubed honeydew melon
- 1 1/2 cups lime sherbet
- 2 tablespoons lime juice
- 4 fresh strawberries
- Cover single layer of baking sheet with melon, cover, and freeze for about 30 minutes (or until firm). Add melon slices to food processor (or Vitamix) with sherbet and lime juice. Puree until smooth, and dress with strawberries.
