North African Shrimp + Roasted Summer Vegetable Couscous

Deliciously spiced shrimp sit on top of a healthy roasted summer vegetable couscous. This dish is so light and very summery!

INGREDIENTS

FOR THE SHRIMP:

  • 2 pounds shelled and de-veined shrimp {tails off}
  • 1 teaspoon grated fresh ginger root
  • 2 teaspoons ground coriander
  • 1-½ teaspoons Aleppo pepper (found online and in stores at Penzey’s Spices)
  • 1 teaspoon ground cumin
  • ¼ teaspoon ground turmeric
  • ½ of a lemon

FOR THE COUSCOUS:

  • 2 medium zucchini, sliced into half moons (or one zucchini and one yellow squash)
  • 1 cup grape tomatoes
  • 1 large shallot, halved
  • 4 tablespoons olive oil, divided
  • kosher salt and freshly ground black pepper
  • 2 cloves fresh garlic
  • 1-3/4 cup Israeli couscous
  • 2- ½ cups vegetable broth
  • 1 handful chopped fresh parsley
