1 x packet chocolate muffin mix
Ingredients required to make up muffins as per instructions
2 packets Oreo biscuits
125g butter of baking margarine, softened
1 x 250g tub of good quality cream cheese
500g icing sugar, sifted
A little milk to thin out, if necessary
3 Oreo biscuits, crushed
Flake or halved strawberry or raspberries for decoration
Pre heat oven to 180˚C.
Line a muffin baking tray with cupcake liners.
Make up the muffins according to the packet instructions. Crush about half the packet of Oreo biscuits and fold in well into the chocolate mixture.
Place an Oreo biscuit on base of cupcake liner and then scoop mixture over biscuit. Fill about ¾ way up. Bake for 20 minutes. Leave to cool completely before icing.
In a large mixing bowl, place the softened butter or margarine and the cream cheese.
Mix well together until smooth.
Add in the icing sugar and if you feel a little too thick add about a tablespoon of milk and mix through.
Fold in the crushed biscuits.
Ice your cupcakes or for a fancy effect, use a piping bag and pipe icing on top.
Decorate with grated chocolate or a flake and pop a strawberry on top or any other cake decoration of your choice.
