A tasty and visually appealing salad that is so easy and quick to make.
375ml frozen peas, thawed (1½ cups)
3 – 4 spring onions, chopped
45ml fresh mint, roughly chopped (3Tbs)
Feta cheese, crumbled
Baby spinach leaves
Place peas in a colander and pour tap water over. Leave to thaw.
Use either a salad bowl or platter and place baby spinach leaves on base of dish.
Top with the thawed peas and then sprinkle spring onions over, followed by the chopped mint.
Sprinkle feta over the top of salad.
When ready to serve, pour over the salad dressing.
60ml (4Tbs) olive oil
80ml white balsamic vinegar (one third cup)
2 cloves garlic, crushed
20ml (4tsps) sugar
Salt and freshly ground black pepper to taste
Whisk the salad ingredients together until creamy.
