SAVORY CHEESE MUFFINS

Ingredients

  • 140g wheat or cake flower
  • 10ml baking powder
  • 5ml salt
  • Good pinch cayenne pepper
  • 2ml dried marjoram or oregano
  • 5ml dried mustard powder
  • 100g cheddar cheese, grated
  • 1 extra-large egg
  • 180ml plain yoghurt
  • 30 – 40ml milk

Method

  1. Preheat oven to 180 degrees C/160 degrees C fan/ gas mark 4
  2. Grease with melted butter 1×12-hole muffin pan or 3x mini-muffin pans
  3. Sift the dry ingredients together in a bowl
  4. Add cheese and mix together
  5. Put egg into a measuring cup and fill to about 250ml plain yoghurt and milk
  6. Form a hallow in the middle and slowly add liquid until just moist
  7. Mix with a knife or fork until no dry flour shows, however, do not over mix.
  8. Mixture must be lumpy and not sticky or smooth
  9. Spoon into prepared mini-muffin pans, about 2/3 full, and bake for about 10 – 12 minutes, until brown on top
  10. Check if they done by lifting out of pan. Muffins should be brownish underneath
  11. Serve with chive butter
  12. Best served immediately on the day of baking
