TRADITIONAL INDIAN POTATO AND PEA CURRY

INGREDIENTS

  • 1 1⁄2 cups peas, boiled
  • 1 cup diced potato, boiled
  • 1 cup tomatoes, chopped
  • 1⁄2 cup onion, chopped finely
  • 1⁄2 tablespoon ginger paste
  • 1⁄2 tablespoon garlic paste
  • 2 green chilies, chopped
  • 3 to 4 curry leaves
  • 1⁄2 teaspoon turmeric powder
  • 1⁄2 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon vegetable oil
  • 1⁄2 cup water
  • 1 tablespoon cilantro, chopped
  • salt, to taste

DIRECTIONS

  1. Heat the oil in a pan.
  2. Add the onions, chillies and curry leaves and sauté.
  3. Add the tomatoes and ginger and garlic paste cook till softened.
  4. Add the turmeric powder, coriander powder, cumin powder and garam masala.
  5. Add salt to taste.
  6. Add the potatoes.
  7. Add the chopped cilantro.
  8. Add the water and bring to a simmer.
  9. Add the peas.
  10. Garnish with cilantro.
  11. Serve with Indian Bread or Rice.

Tip: I microwave frozen peas for about 5 minutes in my microwave till soft.
