I arrived in Portugal this past weekend to spend sometime with my friend Venessa. Venessa is a chef and cooks for a living in Carvoeiro. Her kitchen is filled with fruit and vegies and she has the best stocked pantry I have ever seen.
She has the same dishwasher that I sold her 19 years ago and it is still going strong, being worked every day. She also uses the Defy stove she purchased 21 years ago, that stove goes from 7am to 7pm daily.
We enjoyed a lovely walk on the broadwalk and feasted on a surperb supper of Melazani which had two types of brinjals, a gorgeous striped one and the normal one, they are baked in the oven in slices, then layered with a home made tomato, onion and fresh basil sauce with ricotta and permasan cheese. Its topped with panko crumbs and baked.
We finished that off with a delicious polenta and pistachio cake which is made from greek yoghurt, butter and brown sugar creamed together with eggs, plenta and ground postachio nuts ( the Nutribullet does an excellent job of these ) and elderflower juice topped with a few chopped pistachio nuts.
