This is so easy to make and great to have available in refrigerator. Serve with steak or chops or delicious as a snack with savoury biscuits and cheese of your choice. Why not make up a batch and scoop into attractive glass bottles which are readily available and inexpensive and give as gifts. Your friends or family will be so impressed that you made it yourself.
Makes just over 1 cup
30ml (2tbs) cooking oil
45 ml (3tbs) butter
About 5 large onions, peeled and thinly sliced (can also use red onions)
10ml (2tsp) mustard seed
80ml brown sugar
60ml (5tbs) balsamic vinegar
50ml red wine
Salt and pepper to taste
Heat oil and butter in a saucepan over moderate heat and sauté onions for about 8 minutes or until softened. Stir now and again.
Add remaining ingredients, except seasoning and continue to cook over a medium to low heat for about 20 minutes, until onions are soft and sticky. Season to taste.
Spoon into sterilised glass jar.
