Skinny Fries

Skinny fries which are crispy on the outside and uffy on the inside, made in the air fryer are just delicious.

INGREDIENTS

Chips:

  • 2 kg potatoes, peeled
  • Marie Rose Sauce:
  • 60 ml thick mayonnaise
  • 30 ml tomato sauce
  • A few drops Worcester sauce or Tabasco sauce 10 ml lemon juice
  • Salt and white pepper or cayenne pepper

METHOD

  1. Cut the potatoes into matchstick-sized chips. Do not go too small, otherwise the potatoes will fall out of the basket.
  2. Soak the chips in a bowl of cold water for 30 minutes. This helps remove excess starch and will make crispier chips.
  3. Remove; shake off excess water; dry the chips in a tea towel.
  4. Turn the air fryer on and set the temperature to 160°C.
  5. Place the chips in the basket and secure the tray.
  6. Set the timer for 8 minutes and turn on. Remove the basket from the fryer and shake around to loosen the chips.
  7. Set the timer for a further 8 minutes and repeat shaking the chips.
  8. Set the temperature to 180°C, and set the timer for 4 minutes. Once chips have cooked they will be golden brown and crisp.
  9. If the chips are not crisp enough, repeat at 180°C for 3 minutes at a time until done.
  10.  While the chips cook, make the sauce.
  11. Mix together all ingredients for the sauce, and season with salt and pepper, or cayenne pepper, to taste.
  12.  Serve the chips with sauces of your choice, such as tartar sauce, tomato sauce, sweet chili sauce, aioli sauce, etc.
  13. Oven-fried matchsticks: Place uncooked potato matchsticks in a bowl and toss together with 50 ml sun flower oil and salt.
  14. Spread out evenly on a baking tray which has been lined with a silicone mat or baking paper. Bake at 180°C/160oC fan/Gas mark 4 for 35–40 minutes until crisp and golden brown.
  15. Oven-fried matchsticks: Place uncooked potato matchsticks in a bowl and toss together with 50 ml sun flower oil and salt.
  16. Spread out evenly on a baking tray which has been lined with a silicone mat or baking paper. Bake at 180°C/160oC fan/Gas mark 4 for 35–40 minutes until crisp and golden brown.

Serving Idea:

Make paper cones from rm A4 paper cut into 20 x 30 cm pieces. Staple into shape, ll cone with baking paper and then with drained chips – a real show stopper.

Equipment: vegetable peeler, sharp knife, chopping board, large bowl, tea towel, bowl for mixing sauce, bowl for serving sauce, spatula, spoon, oven gloves, serving platter, serviettes.
