SPRINGBOK SALAD

With the Rugby World Cup commencing soon, we thought, how about a Springbok salad to accompany the many braais (barbecues) that will be taking place this weekend. A great combination of colours with inspiration from our South African flag and using ingredients that are readily available. Go Bokke!

Makes 6 portions

1 cucumber, seeds removed and sliced
1 punnet baby tomatoes, halved
3-4 stalks celery, cut into slices
1 yellow pepper, cut into long strips
1 avocado, cubed
1 round feta, cubed
A few chives, chopped finely
A handful chopped parsley
A few black olives, de-stoned

Dressing:
60ml olive oil
25ml red wine vinegar
A squeeze of fresh lemon juice
A pinch of dried herbs
Freshly ground black pepper to taste

Place all ingredients into a large salad bowl. Mix all the dressing ingredients together and pour about half dressing over salad. Pour remainder into a jug so that your guests can use should they want more dressing on their salad.
