STICKY TOFFEE PUDDING

A warm dessert that will satisfy any sweet tooth. Keep some of the sauce back and pour a little over each individual portion when serving.

Serves 8

250g dates, chopped
500ml boiling water
10ml bicarbonate of soda
10ml vanilla essence
100g butter
375ml sugar
2 eggs, lightly beaten
750ml cake flour
10ml baking powder

Sauce:
100g butter
250ml light brown sugar
200ml golden syrup
5ml vanilla essence

Pre-heat oven to 180C.
Place dates in a large bowl and pour boiling water over. Add bicarbonate of soda and vanilla essence and mix well. Set aside to cool. Cream butter and sugar together well and then add the slightly beaten eggs and mix well. Sift together the cake flour and baking powder and alternate pouring in the dry ingredients with the date mixture and mix well. Pour mixture into a greased ovenproof dish and bake for 40-45 minutes or until a skewer comes out clean. Remove from oven and poke the
surface all over with a skewer. Pour hot sauce over and leave to soak in.

Sauce:
Place all ingredients in a large glass jug or bowl. Microwave on 100% power for about 5 minutes. Stir well half way through cooking. You can also make sauce on stove top. Place all ingredients in a saucepan and bring to the boil, stirring continuously until sugar has dissolved and sauce has thickened, slightly.
