Sweet Corn Bake

For me I don’t like to sit and chomp a mealie. It just doesn’t feel right chomping a mealie at a braai in front of everybody. So I came up with this sweet corn bake which I think is fantastic.
In true South African style you put sugar in it but you can leave it out if you don’t want to.

3 eggs
100ml brown sugar
50ml cake flour
Salt and pepper
250ml milk
60ml melted butter
500g corn kernels
You can either cook your own sweet corn or just buy the frozen. Its much better if you cook your own.
250ml bread crumbs
125ml grated cheese

Pre-heat the oven to 180 degrees
Grease an oven proof casserole
Put the brown and flour in a bowl
Whisk the eggs, milk and melted butter together.
Mix the wet ingredients into the flour mixture
Stir in the sweet corn
Pour the mixture into a baking dish
Combine the bread crumbs and cheese and sprinkle over the corn mixture
Bake for 30 to 35 minutes until the topping is golden brown

This is a super dish. It’s a vegetarian dish. You can have it on its own. You can have it as accompaniment to meat at a braai. Its absolutely delicious and wonderful for kids.
I just find with my little grand children that they will eat this.

If you want to spice it up you can put some cayenne pepper in it or mix some chillies into it.
You can cut a piece and take it to work the next day for your lunch. Fantastic, fantastic meal and very South African.
