Hummus is all the rage as it’s healthy and tasty and very easy to make. Why buy hummus when you can make it oh so easy? This version is really tasty using sweet potato as a base which gives an unusual flavour and pared with the orange, it’s just perfect to serve as a light luncheon with veggie sticks, breads and bruschetta, or as part of a finger food spread. We also love it to serve as a starter with a glass of chilled wine, it’s the perfect partner. Kids also love hummus and this is one way to get them to eat that veg!
Makes 1 large bowl
500 g cooked and peeled sweet potato, chop roughly
1 x 400 g can chickpeas, drained
45 ml Tahini paste
2 cloves garlic, crushed
Juice and rind of 1 orange
5 ml cumin
25 ml honey
45 ml olive oil
Sea salt to taste
2 ml Sumac spice (optional)
Place all ingredients into a food processor which has been fitted with the double-knife-stainless-steel blade.
Process for a few minutes until fairly smooth. Stop and scrape down and process again. If mixture is a bit thick, thin down with some more olive oil.
Serve with a little more olive oil drizzled over and sprinkle with sumac
