BACK TO SCHOOL HEALTHY LUNCH BOX IDEAS

We had such fun creating some delicious and healthy lunch box meals perfect for back to school or work!

Here are some of my favourites that are so quick and easy and make lunch time so much more fun!


Vegetarian Pinwheel Wraps

Turn your everyday wraps into cute little pinwheels!


Ingredients:

Low Kilojoule Multi-Seed Wraps

Spar Sweet Chilli Sauce

Spar Simply Veg Vegetarian Prawns

Mayonnaise

Beetroot

Baby Spinach

Mixed Peppers

Method:

Start off by making your Sweet-Chilli Mayo by mixing your sweet-chilli and mayonnaise together then layer your chopped up spinach, beetroot, mixed peppers together and add in your vegetarian prawn pieces once cooked. We got ours from the Spar Simply Veg range and put them in the Philips Air Fryer for approximately 12 minutes on 180c. Roll up the wrap before slicing into little pin wheels.




Place in lunch box and your will be parent of the year!

Peanut Butter, Honey & Oat Smoothie

Keep energy levels high with this creamy protein packed peanut butter smoothie. It is also fantastic for breakfast on the go!

Ingredients:

½ Cup of Peanut Butter

½ Cup of Oats

2 tbs Honey

500ml Almond Milk

Method:

Place all of the above ingredients into a powerful blender and blend until smooth, serve in a glass if you are at home or into a juice bottle for school.



Strawberry & Kiwi Smoothie

Ingredients:

1 Punnet of Strawberries

3 Peeled Kiwi Fruit

500ml Soya Milk

1 tbs Honey

Method:

Place all of the above ingredients into a powerful blender and blend until smooth, serve in a glass if you are at home or into a juice bottle for school.




Fresh health kick juices:


Fresh orange – this is as simple as popping in your oranges with some water into your blender and pouring into a juice bottle for school or a desired glass. This is packed full of vitamin c!





Fresh Mango – this is just as simple, pop your mango into a blender with some water and mix away and if you want to make it extra fancy rim the glass with some paprika.



Cranberry & Peanut Butter Clusters

These are so quick and easy to whip up with only 5 ingredients the night before and the variations are endless. You can make a big batch for a week’s worth of lunch box treats.

Ingredients:

1 Cup of Peanut Butter

1 Cup of Sugar

1 Large Egg

¼ Cup of Oats

60g Dried Cranberries.

Method:

Place all of the above ingredients into a large mixing bowl, mix well until combined.

Take little portions into the palm of your hand and roll them into balls that you will place on your greased baking tray. Lightly press down the cookies with a fork and bake at 180c for 10 – 12 minutes. We did ours in the Philips Air Fryer. Pop these in the lunch box as a surprise treat!



Perfect Pita-Pizzas

These are a healthier alternative to traditional Pizza’s and can be done in less than 5 minutes.

Ingredients:

Pita Bread

Spar Simply Veg Sausages

Tomato Paste

Mozzarella Cheese

Fresh Basil

Method:

Cut your Pita bread into perfect little circles using a round cookie cutter. Place 1 teaspoon of the tomato paste onto the Pita as a base and then place your toppings as desired. Place into your air fryer or convection oven on 180c until the cheese is golden. Allow to cool before placing in lunch box.



Fruit Skewers:

A fun alternative to the normal cut fruit – try using a cookie cutter to make them into shapes! You can pop them into a zip-lock bag and pop them into a lunch box.



Reaching for the Stars:


Brighten up the conventional sandwiches by using a star-shaped cookie cutter!

Ingredients for Chicken & Cheese Sandwich:

Spar Chicken ham

Spar Mayonnaise

Cheese

Add in some nuts, you can make your own trail mix.

Add in a Cranberry & Peanut Butter Cluster (Recipe above)

And some fruit cut out into shapes.




Pizza Perfect:

Place your pita pizzas in with a peanut & cranberry cluster, and some flower shaped melon cut out using a cookie cutter.



Cool as Cucumber:

If bread is not your thing, then this is a fun alternative!

Ingredients:

Cucumbers sliced and filled with cream cheese, add in some heart shaped strawberries and a peanut & cranberry cluster (recipe above)
