CUCUMBER & WATERCRESS SOUP
If you tuned in to our live Christmas cooking session recently with LG - we made a lovely Cucumber & Watercress Soup. If you missed it you can catch the replay after watching this fabulous recipe.
2 Chopped cucumbers —peeled, seeded and cut into chunks
250ml (packed) watercress sprigs
10 dill sprigs
30ml white wine vinegar
15ml extra-virgin olive oil, plus more for drizzling
375ml plain yogurt
Freshly ground pepper
4 radishes, finely chopped
2 spring onions, finely chopped
Add all of the above ingredients into your blender; we used a kitchen aid for its powerful blending function, and blend until a smooth soup consistency is formed.
Then Transfer the soup into a glass serving bowl and stir in some additional yogurt or blot it on to decorate then lastly add the cucumber and dill. Refrigerate until chilled and serve.
