Super easy tiramisu, this single serving dairy-free plant-based version that tastes oh so good! Espresso made with Delonghi La Specialista Coffee Machine – you have to try it!

Ingredients: 1/2 cup cashews soaked in hot water for 30 minutes 1/3 cup coconut cream 1/4 cup sugar of choice 1/2 tsp vanilla extract or coffee extract Pinch of salt Sponge Finger cookies of choice Shot of espresso

Method: 1. Drain the cashews, add the coconut cream, sweetener, vanilla extract, and salt. Blend together until smooth. 2. Pour a glass of espresso let it chill slightly, add the finger cookies to a glass, add half of the espresso to soak, and add 2-3 tbsp of the cashew mascarpone on top of the finger cookies. Add more finger cookies on top and then add the rest of the espresso to soak. Add more cashew mascarpone.

3. Place in the fridge to chill and serve with a sprinkle of cacao powder.
