If you tuned in to our live Christmas cooking session recently with LG - our first dish was a fresh tomato soup made in the LG Neo Chef. If you missed it you can catch the replay after watching this fabulous recipe.

This dish is super quick and easy to make especially using the LG Neo Chef, it gives your table a pop of colour and not to mention, it is delicious too!


  • 1kg vine tomatoes (or a mix of tomatoes and baby tomatoes)

  • 3 – 4 teaspoons of garlic paste

  • Olive oil

  • 60 ml fresh basil leaves

  • 15 ml balsamic or red wine vinegar

  • 125 ml – 250 ml good quality hot vegetable stock ; depending on thickness of soup

  • 250 ml , Coconut milk soya milk, almond ,rice milk or cream

  • 60 ml basil pesto

  • Salt & pepper


Place all of the above ingredients except the milk into a microwavable Pyrex dish. Place the bowl into the LG Neo chef Convection microwave and cook on high for 10 minutes until the tomatoes have cooked through and turned a dark red colour.

With a blender or emulsion stick blender , blend the mixture until a thick soup texture is achieved and all of the ingredients are blended well.

Making this soup in the LG Neo Chef was a breeze, with it's 9-in-1 capabilities it is definitely one of my favourite appliances this season and one that I would recommend to anyone looking for a gift this Christmas.

Place into your favourite serving dish, stir through your cream or chosen substitute and enjoy!
