ICED EASTER BISCUITS

These Iced Easter Biscuits are fun for the whole family to make. They are iced with Royal icing and make a fantastic Easter surprise.


Ingredients

  • 500g Self raising flour

  • 1 Teaspoon Cinnamon

  • 250g Castor sugar

  • 2 Beaten eggs

  • 250g cold butter

Royal Icing

  • 4 Cups of Powdered sugar

  • 2 Egg whites beaten

  • Water as needed

Instructions

Prepare your baking trays by lining them with baking paper and preheat the oven to 190*C. In a mixing bowl add the Sugar and cubed cold butter and mix until smooth. Slowly add the eggs, cinnamon and then the flour. Roll out onto a flour dusted surface and cut out your desired shapes.


In the meantime prepare the icing.

To prepare the icing add the egg whites to a bowl and whip up until peaks form. Then add the powdered sugar and blend until thickened. Add water if needed. Split the icing into smaller bowls and colour using gel food colouring to reach desired colours.

Once the biscuits have cooled ice with your favourite designs and allow them to set.
