Raw Zucchini Summer Salad

A Raw Zucchini summer salad is the ideal meal on a hot summer’s day. This is because of fresh bursts of apple, melon and pomegranate. Some vegetables lose their potency during the cooking process so by incorporating raw vegetables into your diet you are getting the purest form of the nutrients, therefore giving you more from your vegetables.


  • 1 Red apple

  • 2 Large Zucchini’s

  • 1/2 a  Punnet of Pomegranate seeds

  • 1/4 of a Melon

  •  1/3 a cup of chopped walnuts

  • 4 Tablespoons of Balsamic Vinegar

  •  1 Table Spoon of good Quality Olive oil

  • Salt & pepper to taste


To create the salad you would start off by prepping your fruit and vegetables. Start off by slicing fine strips of the Zucchini using either a mandoline slicer or a spiraliser. Then add it to a bowl with the Balsamic Vinegar, olive oil, salt and pepper. Set this aside for approximately 10 minutes to soften the zucchini. The next step is to thinly slice the apple and melon, then chop the walnuts.

Once all of the fruit and vegetables have been prepped plate the salad onto a starter plate. Start by placing the looped zucchini ribbons around the plate. Then place your melon and apple slices alongside each zucchini ribbon. To finish sprinkle the walnuts and pomegranate seeds over the salad with a drizzle of olive oil.

Season, Serve & Enjoy.
