Today’s #WellnessWednesday recipe from Liviya Nutrition and Fitness is a healthy alternative to potato crisps. Cooked in a little coconut oil instead of deep fried, beetroot crisps are heart healthy, packed with essential nutrients and help to lower blood pressure.
Beetroot Crisps (serves 8)
Cost of ingredients in October 2020: Approximately R4 per person
Ingredients
2kg beetroot, peeled and topped and tailed
Coconut oil
Salt and pepper
Method
Place the beetroot in boiling water and boil on the stove for approximately 30 minutes (or until slightly tender but still firm). Drain the water and leave to cool on paper towels to absorb excess water.
Slice the beetroot into thin rounds and pan fry in batches in a non-stick frying pan in a little coconut oil. Add ½ a teaspoon of coconut oil before you fry each batch. Empty the beetroot into a bowl lined with paper towel and sprinkle with salt and pepper.
Serve with hummus (see our gluten-free recipe) or toss in a salad.
