VEGAN GREEN THAI CURRY

Vegan Green Thai Curry (serves 4)

Cost of ingredients in January 2021: Approximately R10.85 per person


Ingredients

  • 25 - 50g Green Thai curry paste (depending on how “hot” you like your curry)

  • 3 tbsp coconut oil

  • 400ml (1 tin) coconut milk

  • 1 cup vegetable stock

  • 1 tsp soy sauce

  • 1 tsp lemon juice

  • 2 tsp sugar

  • 1 small onion, chopped

  • 1 medium size sweet potato, cubed

  • 50g green beans, chopped

  • 100g cauliflower, cubed

  • Approx. 6 large spinach leaves, chopped


Serve with rice or noodles


Method:

Heat the oil in a heavy-bottomed saucepan on a low heat. Gently saute the curry paste with the onion, stirring continuously. Stir in a little of the coconut milk until smooth and continue to do so until all the coconut milk has been added to the pot. Add the vegetable stock, soy sauce, lemon juice and sugar. Simmer for 10 minutes on a low heat.

Add the sweet potato and allow to cook until soft. Then add the green beans and cauliflower and cook until soft. Lastly add the spinach. Switch the stove off and allow to stand. The longer the curry stands, the more intense the flavour will be (you can even leave it overnight and serve the next day). Serve with cooked rice or noodles.
