VEGAN PARTY PLATTER
Last #WellnessWednesday Liviya Nutrition and Fitness gave their top 3 tips for avoiding the post-holiday bulge. This week they share a delicious vegan party platter recipe with us. This recipe is nutritious, low in fat AND cost-effective - perfect for the festive season.
Vegan Party Platter(serves 4)
Cost of ingredients in December 2020: Approximately R15 per person
For the dips
1) Tomato salsa
2) Avocado dip
Mash together 1 avocado, a pinch lemon pepper and 1 tsp lemon juice
3) Olive oil and balsamic vinegar dip
Mix together ¼ cup olive oil, 1 tsp minced garlic and 2 tbsp balsamic vinegar
4) Butter bean dip
Blitz together 1 tin butter beans (drained), 1 tsp minced garlic, ½ tsp lemon juice, ½ tsp lemon pepper, 1 tbsp vegan mayonnaise and salt and pepper to taste.
For the crudités
Slice a loaf of ciabatta bread and arrange on a platter with a variety of vegetables cut into sticks e.g. celery, carrot, green string beans, red and yellow pepper. Serve with the dips and enjoy!
