Vegan Rice Salad Bowl (serves 2)
Cost of ingredients in December 2020: Approximately R12.50 per person
Ingredients
1 cup cooked brown rice
½ tin chickpeas, drained
1 ripe avocado, peeled, pitted and diced
1 spring onion, chopped
A handful of green beans, chopped
A few red cabbage leaves, finely chopped
Dressing
A few glugs of extra virgin olive oil
A squeeze of lemon juice
Salt and pepper
Method
Divide the ingredients between 2 bowls and drizzle the dressing ingredients over. Enjoy!
