VEGAN RISOTTO

Last #WellnessWednesday Liviya Nutrition and Fitness shared some of their cost-cutting healthy recipe hacks with us and promised to share their delicious low-cost Risotto recipe. Here they use ordinary white rice to create a cost-effective alternative to Italian Risotto at only R4.75 per person. This recipe is also far healthier than traditional Risotto as it does not contain butter, wine or cheese.





Vegan Risotto Alternative (serves 8)

Cost of ingredients in January 2021: Approximately R4.75 per person





Ingredients

  • 1 kg butternut, peeled and cut into small cubes

  • 500g carrots, peeled and cut into small cubes

  • 1 onion, peeled and chopped

  • 3 tbs coconut oil

  • 1 tbs crushed garlic

  • 1 tsp vegetable spice

  • 1 tsp curry powder

  • 1 vegetable stock cube dissolved in 1 cup of boiling water

  • 2 cups white rice

  • 2 vegetable stock cubes dissolved in 2 litres of boiling water




Method

In a big pot, saute the onion, garlic and spices in 2 tbs coconut oil. Add the butternut and carrot cubes. Add the 1 cup vegetable stock and cook until soft.

In the meantime, cook the rice in the 2 litres of boiling water (with stock cubes) until all the water has been absorbed by the rice.

Add the rice to the butternut and carrot mixture and cook for a further 10 minutes. Switch off the heat and add 1 tbs coconut oil and mix well. Serve in bowls and enjoy – the whole family will love it!
